You can concasse a number of things, but classically we concasse tomatoes. The first step is to remove the core, using the tip of your knife, then mark the bottom. Bring your water to the boil and place the tomato in the water. Count to ten, and when the skin is tight and beginning to tear, remove from the cooking process and place straight into cold water (to take the heat out of them) and then begin to peel. Once the tomato has been peeled, remember not to throw the waste away as this can be added to your stockpot! Once peeled, evenly quarter the tomato and remove the line of pips and any remaining core. To finish, slice into batons and then dice to achieve a uniform look.
