In this video, Richie demonstrates the Jardiniere cut using a carrot. Straight off the bat you will notice he is adopting the bridge and claw technique to protect his fingers from any injuries.

To ensure consistency in your work make sure that any cuts you make are all the same size. In this example Richie is using a pre-determined cut of carrot as a guide. Remember, equal cuts will ensure equal cooking time.

The next step in the Jardiniere process is to square off the carrot to ensure there is no rocking when slicing and then cut the carrot into identical batons. Any spare trimmings can be allocated to the stockpot or another dish to reduce waste.
